I completely understand how hard it is to live at college. For the longest time I had nothing but a microwave and I ended up getting a toaster oven. If you have the means to get a toaster oven, it might help as well. They are usually not allowed in dorms, but I hid mine before inspections.
If you’re stuck to just a microwave, look for frozen things. I loved getting frozen veggies. There are several different companies that make gluten free frozen veggies. Just make sure you read the ingredients that they didn’t slip something glutinous in there.
Amy’s Kitchen makes a LOT of gluten free things.
It really depends on what you like, but I could stick with making sandwiches too. PB&J really comes in handy including cold-cuts if you have a fridge. Udi’s or Rudi’s bread are my favorites.
If you have a toaster oven, (20 dollars at Walmart) you can get more things such as french fries, chicken fingers, etc.
